Breakfast is considered by some to be the most important meal of the day, because it gives you a head-start on the rest of your day. However, many of us either skip it or we give it little importance; indeed it can be difficult to find the energy to prepare a real breakfast early in the morning, and some have to hurry and get to work before that. Mothers who work have it even harder, because they still have to prepare breakfast for the children and get on time at work. In order to help those who are in this situation, we have come up with a few simple recipes for breakfast.
If you try some of these simple recipes you will see that you can still have a healthy breakfast and get to work on time, or have the time to deal with other chores. By waking up half an hour earlier than usual, you should be able to prepare a wide range of breakfasts that will give you enough energy for the rest of the day. Instead of just drinking coffee and eating a piece of toast, why not prepare some bacon and egg muffins? Here is what you need for this simple recipe: four strips of bacon, five eggs, one cup of flour, half a cup of cornmeal, 2 tbsp. sugar, 2 and a half tsp. of baking powder, half a tsp. of salt, 1 cup of milk, quarter of a cup of vegetable oil and half a cup of shredded cheddar cheese.
While you mix the ingredients, preheat the oven at 400 F. and fry the bacon until it is nice and crisp; take 3 eggs, a bit of water and some salt and pepper and beat them. Cook them in a skillet until they are well made but still moist enough to be malleable. This may not seem like the simple recipes we promised, but it is truly delicious, so stick around. Next, take your muffin cups and brush them with the drippings remaining from the cooked bacon. Then stir together the following ingredients: the flour, sugar, cornmeal, salt and baking powder. Separately, mix the milk, the 2 eggs and oil; add that to the flour mix and then pour the eggs and cheese over this mixture as well. Now all you have to do is fill the muffin cups and then add bits of bacon on top of each of them.
You will have to bake them for at least 15 minutes, but you can test them with a toothpick; when it comes out clean, it means that your breakfast muffins are ready. There are many other simple recipes for breakfast like that, and they can also be more entertaining if you have to convince your children to eat in the morning. However, if you want to prepare something even quicker, you can just use the bacon and eggs to prepare the classical breakfast that we all like.
