This is one of the simplest and tastiest Indian recipes, and this is how you prepare it: first, you heat some oil in a pan and then you add the onion, garlic and ginger, cooking them for about five minutes. When they are nice and done you add the curry powder and cook for one more minute. Next, you just add the spinach, chickpeas, salt, pepper, and two cups of water. Stir well and bring the mixture to a simmer, waiting for about 12 minutes. In the end the food should be a bit thicker, after some of the water evaporates. This recipe shouldn’t take more than 40 minutes to prepare, using the following ingredients: 1 cup of white rice, 1 small onion sliced, 1 1/2 tbsp. of olive oil, half a cup of yogurt, 2 tsp. curry powder, half tsp. of salt, almost one cup of cream, a bit of pepper, one can of sliced and diced tomatoes, the meat from a rotisserie chicken and quarter cup of fresh chopped cilantro.
The preparation goes as follows: first, you cook the rice as indicated on its package and meanwhile heat some oil in the pan. Add the onion in the pan and cook it for about five minutes, or until it is golden. Now you add the curry powder and cook for one more minute, after which you add the yogurt and cream on top, cooking for 3 minutes more until you add the salt, tomatoes and pepper. When the chicken and rice are done, divide them in bowls equally, adding your curry sauce from the pan on top of them. Sprinkle fresh cilantro on top and you’ve got a good and healthy meal ready for eating.
